Hello everybody! Today I came home to three very ripe bananas, so I decided it was time for some banana bread muffins. I like banana bread because it always seems to be a spontaneous recipe for me; I make it whenever our bananas are getting to ripe. A few things I really liked about this recipe that I found were the muffin style and the chocolate chips that were added in. So I hope the next time you see those bananas getting a little icky you will make these yummy muffins!
Ingredients:
- 3 ripe bananas
- 2/3 cup vegetable oil
- 1 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups flour
- 3 tablespoons milk
- 1/2 cup chocolate chips
Directions:
1. First mash your bananas with a fork.
2. Then add in your vegetable oil, sugar and vanilla.
3. In a separate bowl mix together baking powder, baking soda, salt and flour.
4. Add in the dry ingredients and stir until just combined.
5. Finally add in the milk and the chocolate chips.
6. Scoop the mixture evenly into 12 muffin tins.
7. Bake at 350 for 20-24 minutes.

They look so yummy and cute. I'm going to try and make a vegan version of these on the weekend.
