Last night, I got to try a new recipe that I spotted over at mylifeasamrs. I did make a few adjustments to the recipe as I went along, however.
Here's what you need:
- Lay's Jalapeno Kettle Brand Chips
- Chicken Breasts
- Milk
- Eggs
- Oil
- Cayenne Pepper (optional)
- Salt (optional)
First is the fun part! Crush those chips up as finely as you can! You don't want a lot of chip clumps. Don't make the mistake I made and give up on grinding them toon soon. I think the chicken would have held together just a tad bit better if I had ground the chips up more (maybe with a food processor?).
Now mix a cup of milk and two eggs to dip your chicken strips in. Coat evenly and then heavly coat with your chip mixture. The chip mixture can be either just the chips, or you can sprinkle about a teaspoon of cayenne pepper and a little sprinkle of salt just to spice it up a bit!
Now add your meat pieces to a frying pan filled with oil and cook until brown and crispy! I will make mention that the chicken isn't NEARLY as spicy as the chips are so if you want that extra kick, go with the cayenne pepper!
Voila! Me and my husbie loved this one! The chicken was SO incredibly flavorful. It reminded me of the chicken strips you get at O'Charleys! <3
