This is one of my favorite and super easy recipes! I make these as often as I can and the other night, I was just craving them!
Ok, here's what you need to make this delectable side dish (serves 6):
- 1 pound fresh green beans
- Butter
- Lemons or lemon juice
- Salt
Start by washing thoroughly all your green beans and snapping the ends off! Next, dump them into a pan of boiling water and cook for a short amount of time (3-5 minutes)...the key to these is not overcooking them. They always stay crisp and never soggy. It's all personal preference to how you like them, but when they are ready for me, they are be super bright green!
While those are boiling, begin by scooping a 1/4 cup of butter into a pan and begin to heat on low/medium heat stirring often. Make sure you keep an eye on it so it does not burn.
Let that completely melt and simmer for a few minutes. Now, (and this part can be adjusted to your liking), I slowly add about 5 tablespoons of lemon juice. Some people like them extra sour like me and my husband and some people like it with just a slight zing. It's all in what you prefer. Also, add a dash of salt while it's simmering.
Let this simmer stirring often for about 5 minutes. You want the consistency to almost be a tan color (not burnt). When mine is done and perfect, it has the color of caramel and lots of bubbles.
Now pour your sauce over the drained green beans and mix thoroughly. Serve immediately!

Have you ever tried lemon juice on top of white rice in place of soy sauce? I know it sounds strange, and my husband hates it, but I think it's soooo yummy!
